I can already hear you complaining that you don’t have time for breakfast. Well a healthy breakfast for the whole family can be whipped up in less than ten minutes. Here is my secret recipe for a healthy start.
2-3 WHOLE eggs (Do not use egg whites -seriously)
1-2 Tbsp each: Chopped green peppers, mushrooms, spinach, and onion. (Chop multiple servings of each of these up on Sunday and use them throughout the entire week)
1/4 cup cheese of your choice
Combine the veggies in a large heated pan and let them cook 1-2 minutes, then add eggs and cook until nearly done. Add cheese to mix and fold eggs in half. Cook for 30-60 seconds and flip the entire thing over and cook for another 30-60 seconds. Voila! Just multiply the recipe by how many people are eating to increase servings.
Yes I realize I just posted how to make an omelet. Why? Because eggs are one of the healthiest things on this earth. They are also quick, easy, and CHEAP to prepare. An entire dozen costs $1.
What about all that cholesterol? Isn’t it EVIL? Won’t eating yolks give you a heart attack? The answer is a giant NO! Cholesterol is needed for numerous processes in the body including synthesizing hormones and forming cell membranes. Also scientific studies have shown that high dietary intake of cholesterol from eggs has NO impact on blood levels. The whole idea that cholesterol is bad is just another example of misinformation that the FDA and govt. bodies have passed on to us.
